Olivér’s journey in winemaking began in earnest in 2020, when he embarked on a bold venture into natural winemaking. He believes in letting the true character of the grapes shine, free from the influence of added sulphur. His commitment to natural winemaking is unwavering, and this philosophy is reflected in each bottle he crafts.
The first releases from Olivér’s winery emerged in 2022, each limited to just 800 to 1,000 bottles. He works predominantly with indigenous Somló varieties, including Sheep’s Bark, Furmint, Hárslevelű, and Olaszrizling. Among his creations, you’ll find intriguing orange wines like Rizling x Juhfark, showcasing his innovative approach and respect for tradition.
Living with his family near Lake Balaton in Badacsony, Olivér enjoys a close relationship with the land. His vineyards are managed organically, and his cellar practices reflect his dedication to purity—he eschews sulphur and embraces a range of fermentation vessels, from steel tanks to wooden barrels and porous plastic tanks (Flextank, Speidel).
Olivér’s expertise is enriched by his experience in Switzerland, Germany, and Austria, where he honed his skills in viticulture and oenology. Each bottle of Olivér Weingartner’s wine is a testament to his journey, a snapshot of the volcanic soil, and a reflection of his natural winemaking philosophy.
